Our Process

  • 1. Roasting

    Our cocoa beans are carefully selected and weighed to ensure an even load. We slow roast in small batches to give us our distinct flavour profile.

  • 2. Winnowing

    The husks are removed and the beans are milled to make them smaller in a process called winnowing. These smaller milled pieces are called nibs.

  • 3. Grinding

    The nibs are ground in one of our large stone grinders giving Aunty Tommy's koko our smooth and silky signature texture with no pegu! Seki.
